Overview

Wadining Seino began as a washoku dining room in Arida, Wakayama's mandarin country, and the ramen was an afterthought. The owner, Harada, bought whole chickens so he could teach his apprentices to break them down; rather than waste the frames he simmered them into a deep broth, and that became the closing bowl regulars asked for. Orders kept climbing, and in May 2015 the room was rebuilt around the noodles. The MICHELIN Guide Kyoto–Osaka + Wakayama 2022, the first edition to cover the prefecture, named it a Bib Gourmand.

The bowl the owner names first is Kadocho Shoyu Takumi, built on the hand-made soy sauce of Kadocho — founded in 1841, the last house in Yuasa still brewing by hand, in buildings now designated an Important Cultural Property. He tried that soy sauce in his early years and gave it up as too strong for him, then came back to it after moving to this site, once his technique had caught up. The other signature is Arida Black, the shop's own jet-black dark-soy bowl. A Wakayama tonkotsu-shoyu, a seafood-and-pork broth and a Kinokuni jidori chicken shio fill out the menu, from about ¥900 to ¥1,000 (May 2026), all with house-made noodles.

Tabelog's reviewers chose the shop for the national Ramen Top 100 from 2017 to 2020, and for the Ramen WEST Top 100 in 2024 and 2025. It stands about a kilometre from Minoshima station on the JR Kisei line, or ten minutes by car from the Arida or Arida-minami interchanges, with parking alongside. Hours are 11:00–14:00 and 18:00–20:30; it is cash only, takes no reservations and closes irregularly, so check the shop's X or Instagram before setting out.
